What to do when you have too much food…

Does this happen in anyone else’s family? Two people go food shopping on the same night without telling each other, and suddenly there is way too much food in your fridge, most of which will go bad within a week?

Enter the ginormous lunch salad. I made these for my mom and I to take to work tomorrow. They contain: lettuce, cucumber, grape tomatoes, baby carrots, corn, black beans, red pepper, sugar snap peas, mushrooms, lemon pepper salad dressing.

Still left in the fridge: 3 zucchini, 2 boxes of grape tomatoes, half a bag of carrots, baby corn, beets, 3 peppers, 2 onions, 9 baby artichokes, 2 boxes of sugar snap peas, 1 bunch of asparagus, 4 ears of corn, 3 boxes of blueberries, 2 boxes of raspberries, 3 oranges, 6 apples, 1 bunch of bananas, 1 bag of radishes, half a bag of lettuce, 1 bunch of celery, 1 bunch of mint, and a partridge in a pear treeee.

Any suggestions for recipes that use a ton of produce? Better yet, come over to my house and I will cook you things. I hate wasting food. 😦
