A Quick and Filling Lunch: Raw Corn and Zucchini Salad

Just a quick update to say that I knocked my first recipe off my list! I made this salad for lunch last week, and added lentils for protein. It was delicious and filling, and one can of corn + one zucchini = ready-made meal accompaniment for several days. I particularly enjoyed eating this salad with veggie burgers — it made those slapdash meals in-between classes a lot more satisfying.
