– Olive oil
– Minced garlic
– 1/2 onion
– Shiitake mushrooms
– Two large handfuls of spinach (remember, it will shrink down)
– Balsamic vinegar
Step 1: Heat oil over medium heat in a skillet. Add garlic and onion — saute for 30 seconds-1 minute. Add mushrooms and finally, spinach. Remove from heat and set aside.
Step 2: Season both sides of the fish with salt. Pour a small puddle of balsamic vinegar onto a plate, and dredge the fish through the vinegar. Don’t worry about using too much vinegar — the flavor gets muted during cooking, so the more saturated the fish is, the better the flavor will be.
Step 3: Saute the salmon over medium heat until cooked to desired doneness. Place atop the vegetables.
